I recently checked out and skimmed The Best Chicken Recipes. This is a big volume that tells all about chicken, chicken recipes, and side dishes that complement the recipes. I was drawn to the chapter Backyard Chicken and I did end up preparing Grill-Roasted Beer Can Chicken and American Potato Salad. The beer can recipe gives a choice of two dry rubs, I chose Cajun Spice Rub (paprika, kosher salt, garlic powder, dried thyme, celery seeds, black pepper, and cayenne pepper). I used about 1/3 cup of that inside and outside of a 5 lb. chicken. Using a dry rub on a grilled chicken gives a nice crispy skin, and the flavor penetrated the meat nicely. The potato salad recipe (page 205) is pretty decent. There are endless variations of potato salad, this one turned out pretty good for me. This book is nicely organized. There is lots of good background info on selecting and handling chicken, and the use of specialized cooking tools and equipment. The authors give their opinion of various name brands of chicken. I had never realized the big growers all have selectively bred strains of chicken with different characteristics. I think I'll check this book out again later this summer and try a couple more recipes.
